Each fillet is approximately 1/2 lb. Therefore, the 5 lb. box contains 9-11 fillets and the 10 lb. box contains 19-21 fillets.
There two main differences between mid section pieces and tail pieces.
- Tail pieces don't contain any pin bones.
- Tail pieces are a bit more uniform in thickness, although overall they are generally thinner.
