Absolutely delicious! We use bay scallops for smoking and all smoking is done in-house with our own recipe. Bay scallops are about 1/4 - 1/3 the size of the Large Alaskan Scallops we sell as fresh frozen. We like to use small scallops for smoking as you get a better smoke flavor, and smaller scallops make for easier sharing!
All our scallops come from Alaskan waters.
